Walnut Oil Saag Aloo (Spinach and Potato Curry) Recipe

Ingredients
- 2 medium potatoes, peeled and diced
- 1 cup fresh spinach leaves
- 2 cloves garlic, minced
- 1 small onion, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon red chili powder (optional)
- Salt, to taste
- 2 tablespoons walnut oil
- Fresh cilantro, for garnish
Instructions
- Heat 1 tablespoon of Kaizer Walnut Oil in a large saucepan over medium heat.
- Add cumin, coriander, turmeric, and chili powder (if using) and cook for 1-2 minutes until fragrant.
- Add onion and cook until softened, about 3-4 minutes.
- Add potatoes and cook for 5-7 minutes or until they start to brown.
- Add spinach leaves and cook until wilted.
- Stir in garlic and cook for an additional minute.
- Season with salt to taste.
